The USDA classifies eggs by minimum weight per dozen. Most recipes are written for large eggs. When substituting a different size, you need to match the total egg weight to maintain proper moisture, fat, and protein ratios in your recipe.

Weight-Based Conversion

This converter calculates the total weight of the eggs your recipe requires, then determines how many eggs of your available size are needed to match that weight. The result is rounded to the nearest whole egg, with a note when the match isn't exact.

Tips
  • For baking, egg weight accuracy matters more than in cooking — weigh eggs when possible.

  • For custards and emulsions where egg ratio is critical, prefer weighing over counting.
